I am a legitimate oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes along with you. Eep! Have you tried any of them yet? (? You can find all of my oatmeal cookie recipes right there!) They are some of the most popular recipes in my website cause they taste very sweet and comfy, just like traditional"indulgent" oatmeal cookie recipes, but they include no refined sugar or bread!
So you'll begin with whole wheat flour (or gluten-free, if you prefer) and prompt oats (like those... or these for a gluten-free edition!) . Instant oats are thinner and smaller than traditional rolled oats, and you are able to locate them in canisters right alongside those traditional oats in the grocery shop.
I probably sound like a broken record by now... But because I ? you and also need your cookies to flip out absolutely plump and soft, I am reminding you ... Measure your flour and oats properly, using this technique or a kitchen scale! (? That is the one I own and love. It only cost $20!) A lot of either side is likely to make your biscuits taste cakey or dry, as opposed to chewy. This is especially true of the oats--they behave like little sponges and soak up lots of moisture out of the cookie dough!
Ripe bananas- perfect for baking! Love all @amybakeshealthy's yummy & healthful banana recipes!
Watch those bananas? And all those brown spots? When it comes to baking bananas, brown = beautiful! I ? extra speckly bananas cause they've a lot bright, bold flavor--and additional sweetness! That is the minimum amount of brown that I suggest. More is even better!
The remainder of the cookie dough's sweetness comes from a different natural ingredient... Pure maple syrup (like that!) . You desire the type that comes directly from maple trees, which is normally offered in sparse glass bottles or squat, round plastic jugs. Skip the pancake syrup and sugar!

The peppers include much more sweetness! The freshly bought, additional plump, perfectly tender ones are ideal... But if you have older, slightly dried out carbohydrates (hmm... it sounds silly to describe dried fruit as dried out! ) , that is okay!
Just add them to a microwave-safe bowland put water on top till they're completely covered. Seal plastic wrap across the surface, and then microwave the bowl on high for 1 second. If you allow the raisins sit mixing together the cookie dough, then this little hint hydrates them they're incredibly succulent --and that makes a difference in these cookies as soon as they're baked!

Yields: 15 biscuits
The familiar comfy spices and plump raisins make them even more irresistible. They'll keep for a minumum of one week if stored in an airtight container in the refrigerator--should they last that long!
1 cup (100g) instant oats (gluten-free if necessary and quantified like this)
3/4 cup (90g) whole wheat or gluten-free* flour (measured like that )
1 1/2 tsp baking powder
1/4 tsp salt
2 tbsp (28g) unsalted butter or coconut oil, melted and cooled slightly
1/4 cup (63g) mashed banana
1 teaspoon vanilla extract
1/2 cup (120mL) pure maple syrup
In a medium bowlwhisk together the yogurt, pasta, baking powder, cinnamon, and salt. Add in the flour mixture, stirring only until incorporated. Fold in the raisins. Let the cookie dough rest for 10 minutes.
Using a spoon and spatula, dip the cookie dough into 15 rounded scoops on the prepared sheet, and apply to the desired depth and width by means 2 Ingredient Banana Oatmeal Cookies - Kirbie's Cravings of a spatula. Bake at 325°F for 10-12 minutes. Cool to the pan for 10 minutes before turning out onto a wire rack.
Notes: It's extremely important to quantify both the oats and flour correctly employing this technique or even a kitchen scale. (? That is exactly the one I own and love!) Too much of either could dry from the cookies and abandon them cakey instead of chewy.
Immediate oats are also referred to as quick-cooking or moment oats. They come in huge canisters, just like conservative oats. They're not the ones at the tiny flavored loaf of bread. To make your own, include the same quantity of conservative oats to your food processor, and pulse 10-12 days or until the oats are about 1/4 into ? of the original size.
For the gluten-free flour, I suggest the following mix: 1/2 cup (60g) millet flour, 2 tablespoons (15g) tapioca flour, two tbsp (15g) brown rice flour, as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (like this one!) Will also do the job, if quantified like this.
In case your pancakes are mature, drier, learn the facts here now and not too plump or juicy... Add them to a microwave-safe bowl, and put water at the top till they're totally coated. Seal plastic wrap over the top, and microwave the bowl on high for 1 minute. If you let the raisins sit mixing together the cookie dough, then this small hint hydrates them so they're really tender and succulent!
